Ok, so this week has been nothing but food, food, and more food. As I said, I bought a duck last friday, and I used it up this week. So, without further ado, here are the menu's.

Monday:
Duck Breast with a Cherry sauce (made with delicious amish Cherry Jam and Orange Marmalade)
Carrots in a Maple Brandy sauce (flambe)
Spicy Thai Broccoli Rabe
Spinach Salad with Mango and Spicy Shrimp
Mexican Chocolate Frozen Custard (with the cherry sauce from the duck)

Tuesday:
Tilapia in a soy ginger sauce
Tortilla Espanola (potato egg "pancake")
Some other side dish that escapes me at the moment...
Fresh Strawberry Frozen Custard Banana Splits

I also made duck stock from the carcass, bones, neck and skin of the duck... I'm going to freeze most of it into cubes so I can easily use it when I want it.

Wednesday:
Sauteed Duck Liver (if it's not specially fattened, is it still foie gras de canard?) on a crispy potato round with a sherry glaze
Cassoullet (French country stew of Beans, Sausage and Duck)
